Heat oil in stockpot. Sauté onion and garlic in oil then add pork. Sear pork until partially cooked
Add flour and stir. Add chicken broth slowly and keep stirring.
Add spices and rest of the ingredients
Stir often and cook over medium heat for about 1 1/2 hours. Turn to medium low heat and cook for another 2 hours. If it needs to be thicker just add flour and water mixture.
All spices amounts can be adjusted depending on your taste
